The Area: The Collio Goriziano stretches across the hills north of the province of Gorizia on the Slovenian border. The particular soil of the region, called “ponca” in the local dialect, technically flysch, provides the vine with important minerals which clearly mark Olsavia’s wines.

The feudal Castle of Montegrosso d’Asti, built in 1134 by order of the Marquis Bonifacio del Vasto, lord of the city of Asti, dominates and extensive hilly area which is very much dedicated to the culture of vines, and it is the castle’s tranquil spacious, centuries-old cellars which provide a worthy home for the noble D.O.C. and D.O.C.G. wines of these hills. The owners of the Montegrosso winery, the Motta family, have been producing wines since 1794. The Ruleja vineyards, including two hectares of old grapevines planted 60 years ago, benefit from the calcareous soil with sandy strata and the high altitude.

The grapes: 70% Corvina, 20% Rondinella, 10% Corvinoni – selection of the best grapes from individual bunches in the premier cru region. The grapes are generally harvested in the first two weeks of October. They are laid on racks in single layers to allow a better air circulation. The grapes start to dry out on the fruit and on average, after 120 days, they loose 45% of their weight. Throughout this period of time the grapes are checked on a regular basis and any damaged clusters are removed. The grapes are vinified end of February with a long maceration on the skins until the wine reaches an alcohol content of at least 15%. The wine is then refined in kegs before being transferred into barrels. The wine is usually bottled 3 years later.

Grower Profile
The Rubini family were originally silk merchants from the Como area who settled in Friuli in the 1700′s. During this period the Rubini family acquired the Company and developed silkworm farming, for which the Great Officer of Reign, Domenico Rubini created the silkworm cocoon drying co-operative.
Before the planting, the soil is thoroughly tilled, from a minimum of one metre up to 1.20m. This allows the mixing of the soil layers and a better aeration in order to bring new vitality to the present microorganisms. 16 parameters are then examined to know the soil composition. These tests are repeated every 5 years to monitor the condition of the soil and to intervene correctly in case of stress, before the vine suffers. We choose the varieties according to the pedological characteristics of every single parcel, the best rootstock, the sun exposure and the orientation of the rows, which are important for a correct grape ripening and for the control of pathogenic fungi. The soil is tilled also during the vegetative cycle of the vines to keep the soil fresh and to dig the roots in depth, where the soil is fresher.
